It's time for another fancy toast, and this one's super easy, my friends! This is the kind of toast that feels simple, but it's layered with a mix of Mediterranean and Middle Eastern flavors and textures. Think creamy, herby, citrusy, and just a little nutty.

The ingredients are easy to find, though you may need to source the za'atar if you don't have a well-stocked grocery store nearby. Za'atar is a Middle Eastern spice blend that usually combines dried thyme, oregano, and/or marjoram with toasted sesame seeds, dried sumac, and salt.
As for the hummus, use your favorite brand (or make your own). Opt for a plain hummus, since you'll be adding layers of flavor.

Step-by-step instructions
Just toast the bread, fry an egg, and assemble. It's that easy!

Step 1. In a medium nonstick skillet over medium heat, warm the oil and sprinkle in the za'atar. Crack in the egg and fry until the edges are crispy.

Step 2. Spread the hummus evenly over the toasted bread.

Step 3. Add the avocado slices (don't mind my gnarly slices), followed by the fried egg. You could also smash the avocado on top.

Step 4. Squeeze the lemon juice over the top, season with salt and pepper, dill, and toasted sesame seeds or roasted chickpeas.

- Toast the bread in a skillet. Pan-frying the toast in olive oil in a hot skillet is the best way to achieve that crispy bite.
- Use all the za'atar oil. Be sure to add any remaining za'atar oil from the skillet to drizzle over your finished eggs.

Want to switch things up a bit? Play with the flavors to make it our own.
- Flavored hummus. There are so many flavors of hummus to keep you experimenting for days. Try lemon or roasted red pepper hummus, or mix it up with a carrot or beet hummus for a pop of color. My butter bean hummus is another great substitute.
- Switch up the herbs. Fresh parsley, chives, oregano, or marjoram are great options.
- Spice it up. Add a pinch of cumin for a subtle smoky flavor, or make it spicy with crushed red pepper or Aleppo flakes.
- Any-style eggs. If fried eggs aren't your thing, just cook them the way you normally would eat them. Try a soft or hard-boiled egg, or better yet, make them scrambled! You can add a drizzle of za'atar oil over the cooked eggs to get the same flavor.
- Bread swaps. Instead of traditional sliced bread, try bagels, pita, or English muffins.

Za’atar is my absolute favorite spice of all time. I love it on everything and this is no exception. For a salty bite, I chopped up Kalamata olives on to the hummus - it’s wonderful with za’atar! Very easy recipe and 10/10 recommend
