There's nothing like a little nostalgia for breakfast. If you grew up eating toaster cakes, then this corn Toaster Cake Breakfast Sandwich is for you. It's the ideal balance of sweet and savory- made with crispy bacon, perfectly cooked eggs, and melty cheese, then finished with a drizzle of maple syrup.

I grew up eating Thomas' Toast-R-Cakes (not sponsored), and they've always held a special place in my heart. They're nostalgic, simple, and just plain delicious. So when I set out to create the ultimate breakfast sandwich, something McMuffin-esque but sweeter and, frankly, better, using them as the base was a no-brainer.

The best part? They're totally customizable. Love sausage? Do it! Prefer egg whites? Done! Hate cheese? Ba-bye. Honestly, I don't care how you make it; the only non-negotiables are the toaster cakes.

Key ingredient

I'm just here to talk about my star ingredient- Thomas's Corn Toast-R-Cakes. If you've never had them, they are basically English muffin-sized cornmeal cakes (like cornbread) that you can pop in the toaster for amazingly crispy edges.

They are delicious on their own, with a good ol' knob of butter. Because of their "cornbready" flavor, they pair well with bacon and cheese, which is why they make the perfect base for this ultimate breakfast sandwich.

Step-by-step instructions

For me, toaster cakes are easy to find, but they are not available everywhere. If you're lucky to find them, stock up so you can make these delicious breakfast sandwiches.

Step 1. Toast your corn cakes in a toaster until browned (I like a slight char). Butter one side of each toaster cake.

Step 2. Place one corn cake on a work surface, buttered side up. Layer your cooked bacon (or sausage) on top.

Step 3. Add your cooked egg and cheese on top of the bacon or sausage.

Step 4. Top with the other corn cake, buttered side down.

Fold your eggs. A folded soft scramble or omelet-style egg will fit best in your sandwich.

Variations

Customize your sandwich anyway you want!

  • Bacon chutney. Instead of traditional crispy bacon, spread a layer of bacon jam on the toaster cakes.
  • Sausage. Swap the bacon for sausage patties, or omit the meat altogether.
  • Add a potato layer. For an extra indulgent breakfast sandwich, add a layer of cooked breakfast potatoes or a hash brown patty.
  • Traditional breakfast sandwich. If you can't find toaster cakes, you can use English muffins or biscuits instead.

Serving suggestions

Instead of making a stacked sandwich, serve it eggs Benedict-style with a poached or sunny-side-up egg. If you like a runny yolk, this is the better option (otherwise, your sandwich would be very messy). Don't forget to wash it down with a Bloody Mary!

This breakfast sandwich is best served fresh. You can cook the bacon in advance, but you'll need to prepare everything else when you are ready to eat.

Ingredients
 

  • 1-2 slices bacon
  • 1-2 eggs
  • Kosher salt and fresh ground pepper to taste, optional
  • 1 slice cheese (American, cheddar, or your favorite)
  • 2 corn toaster cakes (such as Thomas' Toast-R-Cakes)
  • butter, for spreading
  • hot sauce or ketchup, optional
  • maple syrup for drizzling, optional

Instructions
 

  • Cook the bacon: In a skillet over medium heat, cook the bacon until crispy. Transfer to a paper-lined towel to drain.
    1-2 slices bacon
  • Cook the eggs and melt the cheese: Cook the eggs however you like (fried, scrambled, over-easy, etc.). Season with a pinch of salt and pepper to taste. Once the eggs are cooked, place the cheese on top so it begins to melt.
    1-2 eggs, 1 slice cheese (American, cheddar, or your favorite), Kosher salt and fresh ground pepper to taste, optional
  • Toast and butter the cakes: Place the corn cakes in the toaster and toast until the edges are crisp and lightly golden. While the cakes are still warm, spread a thin layer of butter on one side of each toaster cake.
    2 corn toaster cakes (such as Thomas' Toast-R-Cakes), butter, for spreading
  • Assemble the sandwich: Place one buttered toaster cake (buttered side up) on a plate. Add the bacon, followed by the cheesy egg. Top with hot sauce or ketchup (if using). Finish with the second toaster cake, buttered side down. Drizzle the top with maple syrup if using (yes, it will be messy, but so good). Serve immediately.

  • Egg options. A folded soft scramble or omelet-style egg will fit perfectly.
  • Bacon swaps. Sausage patties, turkey, or plant-based bacon. 
  • Cheese. Cheddar, American, Gouda, any cheese that melts is perfect.
