Equipment

  • mixing bowl, whisk, measuring cups and spoons

Ingredients

  • ½ cup tahini stirred, see notes
  • ¼ cup unsweetened cocoa powder
  • ¼ cup honey
  • ¼ teaspoon vanilla extract
  • teaspoon espresso powder or instant espresso
  • teaspoon Kosher or flaky sea salt
  • ¼ cup (4 tablespoon or 2 ounces) hot (not boiling) water, plus more for thinning the spread if needed

Instructions

  • In a medium bowl, add all of the ingredients, and whisk thoroughly until smooth.
½ cup tahini, ¼ cup unsweetened cocoa powder, ¼ cup honey, ¼ teaspoon vanilla extract, ⅛ teaspoon espresso powder or instant espresso, ⅛ teaspoon Kosher or flaky sea salt, ¼ cup (4 tablespoon or 2 ounces) hot (not boiling) water, plus more for thinning the spread if needed
  • If the mixture is too thick, add additional hot water, 1 tablespoon at a time until you reach your desired consistency (it should be easily spreadable, not watery). Note- the mixture will thicken once refrigerated.
Use immediately or store in the fridge for up to one month.

Notes

    1. Tahini can be found in most grocery stores in the peanut butter or international aisle. It can be sold under numerous names such as sesame butter, creamed sesame, sesame tahini, sesame paste, and ground sesame.
    2. Try different brands of tahini to see what you like. Some are creamy, some are gritty, and the amount of bitterness can range from product to product.
    3. When opening the tahini, the natural oils will separate and rise to the top. You must blend the tahini with the oil before using it.
    4. Start with ¼ cup (2 ounces) of hot water. After whisking all the ingredients, if you find that you need more water, add 1 tablespoon at a time, and continue to whisk until you reach your desired consistency. You may find you need up to ½ cup water depending on the brand used.
    5. Tahini spread will thicken in the refrigerator. Keep this in mind when adding your water.
