Irish Soda Bread 

with Apricots and Currants

Irish Soda Bread is technically a quick bread because it's made without yeast

Step 1

Combine dry ingredients in a bowl (flour, salt, sugar and baking soda). In addition, soak the fruit in orange juice.

Cut the butter into the dry ingredients. Combine the wet ingredients, then add to the dry ingredients. Lastly, mix in your fruit.

Step 3

Dump dough onto a floured surface and knead a few times until it comes together. Shape into a 7-inch round, and score an "x" on to the top to vent the bread.

Step 4

Add the dough to a parchment-lined cast iron skillet and bake 50-65 minutes at 375F until golden brown.
